Vinagyu Australis represents, captures and conveys a unique partnership between farmer, grape grower and winemaker. Following many years in growing, producing and premium quality wines for export to markets around the world the partners of Vinous Australis have teamed up with Wagyu breeders and farmers to produce and market top quality Wagyu Beef cattle from the cool climate coastal regions of Australia. Drawing on the expertise of our farmer and breeder network we have developed a supply chain to provide live calves, live cattle and cut beef products for export around the globe.

Our breeding based is located in the grazing lands of coastal Port Fairy in South-West Victoria where the consistent high annual rainfall provides abundant lush pastures. The isolated grazing farms are cooled by coastal sea breezes and provide ideal conditions for the breeding and raising of Wagyu cattle. The prevalence of large dairy herds in the region provides a valuable resource for the ongoing supply of quality F1 cattle.

All parties have dedicated many years to developing their skills, expertise and experience in their chosen craft and also co-operated to produce a range of wines that perfectly complement our Wagyu Beef. Drawing on the partnership of winemaker and farmer, wine and food the Vinagyu Australis wine range is ideally suited to pair with premium Wagyu beef.

Cabernet Sauvignon from the Terra Rosa soils of Coonawarra has been artfully blended with rich ripe full-bodied Shiraz from McLaren Vale. The fragrant and perfumed Cabernet Sauvignon characters are displayed with intensity and in harmony with the spice and black fruits of the rich and ripe Shiraz. 

Vinagyu Australis Cabernet Sauvignon Shiraz is a rich and complex wine with layers of fruit, spice and oak, this wine has abundant ripe and silky tannins and a flavour profile that is designed to best compliment rare grilled Wagyu beef.

McLaren Vale enjoys warm sun filled days and cool nights as a result of the close proximity to the Spencer Gulf. Shiraz and Cabernet Sauvignon grapes excel in McLaren Vale ripening to full maturity with unique regional characters.

Shiraz matured in American oak barrels was blended with Cabernet Sauvignon from French oak barrels, resulting in a soft rich and well-rounded wine. Dark red fruit flavours and abundant ripe fruit and oak tannins provide complexity and structure to this wine that is well suited to a wide range of grilled red meats.
