South Australia provides consistent warm and dry ripening conditions each year. The warm and extended ripening season ensures a complex array of flavours develop with soft ripe tannins consistent with the rewarding easy drinking Vinagyu Australis style.

Vinagyu Australis Shiraz Cabernet Sauvignon is produced from a number of family owned and managed vineyards, creating complexity, consistency and character.

The Shiraz and Cabernet Sauvignon vineyards were carefully monitored throughout the ripening season to track the changes of flavour and tannin profile. When flavours reached peak intensity and tannins softened, the individual vineyards were harvested in the cool mornings before being transported to the winery.

Cool night harvest, gentle crushing and cool fermentation followed by extended maceration ensures a complete yet balanced extraction. Once drained and pressed 20 percent of the wine was matured in French oak barrels enhancing complexity and softening tannins prior to blending and bottling.

Typical Shiraz spice characters are evident with rich red berry fruit flavours of both the Shiraz and Cabernet Sauvignon including cherry, black plum and blackberry. The round fruit driven palate displays subtle soft tannins that add length and complexity enhanced by hints of perfumed French oak.

The Vinagyu Australis Shiraz Cabernet can be enjoyed now with a range of red meat dishes or carefully cellared for further maturation, a perfect match to grilled meats, game and Sichuan hotpot.
